​Lactic Acid is an important flavor component of wine.  The concentration of lactic acid can give the winemaker insight into malolactic fermentation or MLF.  Malolactic fermentation converts malic acid to lactic acid, which yields a smoother taste.


Samples are diluted and analyzed by HPLC with UV detection.  Results are expressed as g/L or grams/liter.
