Citric acid is an important component of wine.  The concentration of citric can give the winemaker insight into fermentation completion, as yeast converts citric acid to acetic acid.  Sometimes added to acidify wine, but not allowed in the EU (European Union).

Samples are diluted and analyzed by HPLC with UV detection.  Results are expressed as g/L or grams/liter.
