A portion of the sample is analyzed by HPLC (High Performance Liquid Chromatography) and compared to standards of known concentration, with RI (refractive index) detection.
A very accurate technique, glucose + fructose is the typical result, but method also looks at sucrose, maltose, and lactose if found.
